Do I get paperwork for the plumbing and the wiring?

Yes, and you should end up holding it. The plumber issues and lodges a certificate covering the pipework, and the electrical side produces its own safety document for the fan, lights and power points. Ask for both at handover and put them with the house papers, because a buyer's conveyancer will want to see them one day.
